In the Viterbo Tuscia, extra virgin olive oil is part of the landscape and of daily work. Frantoio Cesare Battisti in Vetralla is one of its most representative expressions: active for over a century in promoting the area’s EVO oil, with the Caninese as its protagonist.

A cooperative born in 1919

The Cooperativa Agricola Cesare Battisti, founded in 1919, brings together hundreds of local farmers. It is a model with a precise value: pooling many small producers makes it possible to process the olives with shared equipment and expertise, while keeping the direct bond with the territory’s groves. Our work combines historic practices and updated tools, without losing the identity of the product and the respect for native varieties.

Pure Caninese

Among the local cultivars, the Caninese is the most representative. Its single-cultivar oil — made, that is, from a single variety — is recognised by:

  • medium fruitiness and herbaceous notes;
  • balanced bitterness and pungency;
  • intense green colour with golden highlights.

Unlike blends, a single-cultivar oil clearly tells the character of a variety and of the land in which it grows. It pairs easily with pulse soups, grilled meats and seasonal salads.

How we process it

We harvest the olives at the right degree of ripeness and cold-mill them within a few hours. It is the method that preserves the nutritional qualities of the oil, keeps its aromas and ensures its stability over time. Short timing, controlled temperature and clean equipment are the three principles on which we do not compromise, because that is where the quality of the olives is confirmed or lost.

An award-winning oil

The Caninese oil produced in Vetralla has received recognitions in various competitions: among these, the second national prize “L’Oro d’Italia” and the second international prize “L’Oro del Mediterraneo”, both in the light fruity category. They are results that confirm work done consistently, from the care of the groves to the milling.
