Our Story

Cesare Battisti was a historical figure known for his sacrifice and the irredentist ideals of annexing Trentino to Italy.

Nineteen fellow citizens of Vetralla, after fighting in the First World War inspired by the figure Cesare Battisti, returned home.

These 19 survivors, in 1919, founded the Cesare Battisti Agricultural Cooperative Society for the processing and sale of grapes, cereals, and extra virgin olive oil.

The Cooperative is named after Cesare Battisti, in memory and celebration of a historical figure who inspired their return home.

Extra Virgin Olive Oil

Extra Virgin Olive Oil is the product of pressing olives, obtained exclusively through mechanical procedures. The system used for transforming the olives of the members of the Cesare Battisti Agricultural Cooperative Society is a continuous cycle, with cold extraction. Members transport the olives to the mill where they are transformed into oil within 12/24 hours of delivery. This processing method guarantees a product that maintains the organoleptic properties of extra virgin olive oil, preserving the typical spicy note, a sign of quality, due to the high presence of polyphenols. The passion for quality has driven the Cooperative to continuously improve to obtain a unique and unparalleled product that surprises every season.

The olives, after being defoliated and washed, undergo crushing, which transforms the fruit into a paste. The obtained paste undergoes malaxation, a slow mixing process that encourages the union of tiny oil droplets into increasingly larger drops. The malaxated paste is then subjected to centrifugation, allowing for the separation of oil, water, and fruit residues, leveraging their different specific weights (oil is lighter than water). Finally, the oil is filtered through a paper filter to achieve a clear and transparent appearance.

Certified Quality

To tradition, the Cooperative pairs the most modern transformation technologies and precise certification systems, to ensure maximum transparency and traceability of work. We adhere to the quality and regional production requirements of Organic and Dop Tuscia. Organic farming promotes the production of healthy and high-quality products, respecting natural balances for long-term sustainability.

The Protected Designation of Origin (PDO) certifies that the entire production cycle takes place within the Tuscia territory, following a specific Production Regulation set by the European Union.
