The olives, after being defoliated and washed, undergo crushing, which transforms the fruit into a paste.
The obtained paste undergoes malaxation, which is a slow mixing process that promotes the union of tiny oil droplets into increasingly larger drops.
The malaxated paste undergoes centrifugation, which allows for the separation of oil, water, and fruit residues, taking advantage of their different specific weights (oil is lighter than water).
Finally, the oil is filtered through a paper filter to achieve a clear and transparent appearance.
