Respect for the land

It all begins with the soils of Tuscia, where our members’ groves are farmed with sustainable methods, respecting the rhythms of nature. A great oil comes from healthy trees: that is why every agronomic choice aims to preserve the integrity and biodiversity of the environment.

The harvest, a crucial moment

We harvest the olives at the right degree of ripeness, when they reveal their full aromatic potential, gently so as not to damage the pulp and to preserve the organoleptic qualities.

Milling and cold extraction

Right after the harvest the olives reach the mill, where they are crushed in a controlled environment. Extraction is done cold, to separate the oil from the pomace while keeping the aromas and fragrances intact.

Filtering

The final stage defines clarity and stability: filtering ensures a clean oil, with a taste that stays unaltered over time. That is how we get from the olive tree to your table. Discover our oil in our shop.
