Our journey begins in Tuscia, where our members’ olive groves are grown using sustainable methods that respect nature’s rhythms. We firmly believe great oil comes from healthy, thriving trees, and for that reason every agronomic decision is made with the goal of preserving the integrity and biodiversity of our environment.
Harvest: A Crucial Moment
Olive harvesting is a key stage that determines the quality of the final product. Olives are picked at the right degree of ripeness, when the fruit is ready to express its full aromatic potential. Harvesting is carried out with care to avoid damaging the flesh and to preserve all the olives’ organoleptic properties.

Milling: Where Magic Takes Shape
After harvesting, olives are swiftly brought to our mill. Here, through procedures that blend tradition with technological innovation, the olives are crushed. Milling takes place in a controlled environment to avoid any contamination and ensure superior-quality oil.

Extraction: Pure Goodness
The next step is extracting the oil—a thrilling stage when oil is separated from the pomace. We use cold-extraction methods that keep aromas intact, ensuring every bottle contains only the very best essence of the olives.
Filtering: Pure Excellence
At the end of extraction we enter a crucial phase that defines the clarity and stability of our extra virgin olive oil: filtration. This step is essential to ensure impeccable purity and flavour that lasts over time.
