Our history goes back over a hundred years. Born as a local cooperative in 1919, bringing together the area’s farmers, over time it has become a point of reference for the quality of Tuscia EVO oil. The passion for oil passes from generation to generation, and it can be felt in every drop: it is the same care handed down from the founding members to those who today tend the groves and work at the mill.
How we make our oil
Production follows precise steps to guarantee the best quality. It all begins with the olive harvest, which we bring straight to the mill and process with modern methods that still respect tradition: cold milling, within a few hours of harvest, at controlled temperature. Short timing and clean equipment preserve the aromas and the stability of the oil. The result is an extra virgin oil that carries with it the flavours and aromas of Vetralla, from the fruitiness to the bitter and pungent notes typical of the Caninese.
