Here it comes, right on time as every year, the most awaited season in the lush countryside of Vetralla: the olive harvest. Here at Frantoio Cesare Battisti, this time of year is much more than a simple farming activity. It is a ritual, a celebration, a moment when the land and the hands of those who work it meet to give life to the essence of our territory: extra virgin olive oil.

A ritual renewed
The harvest begins at sunrise, when the cool October air still fills the fields. The skilled hands of our farmers, armed with nets and with everything from small rakes to the most advanced farming equipment, begin the delicate process of harvesting, making sure each olive is picked at the right moment, at the peak of its ripeness.

Nature and humankind
The relationship between the olive and the farmer is one of deep respect and understanding. These little green gems are not just the product of a tree, but the result of a whole year of care, attention and, at times, battles with the weather. Every olive harvested is a small victory, a tribute to the resilience of nature and the determination of humankind.

From the branch to the pressing
Once harvested, the olives are taken to the mill, where the magic begins. Here, through traditional processes interwoven with modern techniques, the olives are transformed. Every drop of oil that results is a concentrate of flavour.
