We work to promote the native varieties — Caninese, Frantoio and Leccino — grown among the hills that separate the lakes of Vico and Bolsena. It is a territory marked by its volcanic origin: the two lakes fill ancient calderas, and the soils that derive from them are free-draining and rich in minerals, ideal conditions for the olive tree. From these olives comes an oil with a medium-light fruitiness, herbaceous notes and an aftertaste that recalls almond.

The production of PDO Tuscia extra virgin olive oil follows precise rules: harvesting by hand or with shakers, milling within 24 hours, cold extraction, traceability and certified quality. Each step has a function: the speed between harvest and milling avoids fermentation and acidity, while the supervision of an independent body ensures that the oil genuinely meets the required parameters. This is how we obtain a fresh, stable oil, able to tell the story of the Vetralla territory in every bottle.
