The history of the Cesare Battisti Cooperative in Vetralla is a journey across four generations in the production of extra virgin olive oil. Today it has over 500 members and is a living tribute to the legacy of its founders.<\/p>\n

Since 1919, after the Great War<\/h2>\n

The cooperative was founded in 1919, at the end of the First World War. Its name is a tribute to Cesare Battisti. Inspired by his figure, 19 fellow citizens of Vetralla, returning from the front, pooled their resources and their passion for the land: the Cesare Battisti Agricultural Cooperative was born, dedicated to grapes, cereals and extra virgin olive oil.<\/p>\n

How our oil is made<\/h2>\n

The oil is the result of a meticulous process that starts from the members’ olives, processed within 12-24 hours with a continuous cycle and cold extraction. A method that keeps intact the organoleptic properties and that pungent note, a sign of quality, given by the polyphenols. The stages: defoliation, washing, crushing, malaxation, centrifugation and filtration.<\/p>\n

Sustainability and traceability<\/h2>\n

The cooperative meets the requirements of organic certification and of the PDO Tuscia, with the entire production cycle compliant with the European specification: maximum transparency and traceability. It is a century of passion for extra virgin olive oil, from the heart of Tuscia to the world, in keeping with the founders’ ideals of quality and respect for the land.
